Halloween pancakes!:)

Happy belated Halloween everyone… As busy as I am with life and work, I say to myself every once and a while to keep updating my website for you, my dedicated followers. Did you have a look at my pumpkin? What do you think?:)

Those are carrot cake pancakes from last week!:)

Today I’m sharing with you an easy way to celebrate Halloween at home besides pumpkin carving. Here is a delicious treat from me 🙂 Just follow my instructions to create pumpkin pancakes for you and your family.

You can use carrot instead of pumpkin if you want to try this recipe another time of the year, both are delicious with the right amount of maple syrup:)


  • Pancake mix (you can see from previous recipes how to make this)
  • 1/2 tsp.  cinnamon
  • 3/4 cup coconut milk
  • 3 tsp. olive oil
  • 2 spoons of raisins
  • 3/4 cup shredded pumpkin or carrots
  • 1/4 cup chopped pecans or any nuts you like
  • maple syrup

In a large bowl, whisk together pancake mix and cinnamon. Add milk and 1 tablespoon oil and whisk until combined. Stir in raisins, pumpkin/carrot and pecans until well combined. Heat a large skillet over medium heat. Brush lightly with some of the remaining oil. Working in batches, form each pancake by dropping ¼ cup batter onto the skillet. Cook until golden on bottom, 3 to 4 minutes. Flip and cook 2 to 3 minutes longer. Repeat with remaining batter and oil to make 8 to 9 pancakes total. Sprinkle on top nuts and enough maple syrup to your taste!
