Hello everyone!! I miss you all.
It’s been a while since my last post. After the lockdown real-life hit me! Having a full-time job far away from my hometown limited my free time. I believe I’m not the only one in this position. Well, it must be hard for all of us but I’m glad that we are free to go to work (at least).

Since I have been struggling to find time to cook a proper meal I started thinking about what could be the easiest way to prepare a nice tasty lunch for work! I came up with the easiest solution. Ask your mum or your boyfriend to cook for you, I am kidding guys! 🙂

So today I’m sharing with you an easy lunch box to prepare for work full of vitamins.

Shopping List

  • Your favourite salad mix (I used lettuce & baby rocket)
  • 3 tbsp pre-cooked chickpeas
  • 2-3 mushrooms
  • A carrot
  • Sun-dried tomatoes
  • A cucumber
  • 50g 0% fat feta cheese (click here to find out feta cheese benefits)

DIRECTIONS

Step 1: Chop the carrot and the mushrooms.

Step 2: Heat olive oil in a frying pan over medium-high heat. Add the chopped carrot and mushroom, cook for 2 – 3 minutes and then add 3tbsp chickpeas. Do not forget to add salt, black pepper and broken coriander. Cook for 7 minutes and let them cool down.

Step 3: Meanwhile place the remaining ingredients in a box.

Step 4: Once the cooked ingredients cool down add them in the box.

Step 5 –Dressing– : A tbsp of tahini. For a better taste add the dressing before you eat the salad. If you are not a big fan of tahini add some olive oil lemon juice dressing and you are ready!

HAVE YOU EVER THOUGHT WHAT OUR PURPOSE IS?

WHAT ARE WE MEANT TO BE?

It took me a while but finally I am writing this motivational article. I am very happy to share with you what my experience taught me and what a great friend of mine (Andros Zacharia) helped me realize during one of his speeches.

It’s actually amazing how we can discover our purpose and raise our self-esteem.

The process of discovering WHY we were born and raised in this world is truly magical. It’s magical because we don’t really know how the universe works and slowly slowly it moves us towards our ‘destination’.

. The truth is that the journey towards our destination will be stressful and time consuming with an uncertain ‘ending’.

Personally, I call my own journey Ithaka (Ιθάκη)

[one of my favourite stories form Greek mythology and a Greek island]

Luckily or not we grow up in an environment where it has standards that affect our stress levels to the maximum. The reason of those increased stress levels is actually the pressure we put to ourselves to follow the standards. Not because we agree with what our society supports and promotes but because we live under the fear of failing in the eyes of other people.

Many of us spent their life in survival and consciously we are coping with these ‘standards’ , anticipating the worst case scenario and not letting ourselves to become who we wish to be.

Dear reader, we have to escape from this zone. Your future is created from the unknown, you cannot predict it. Do what you love and follow your own Ithaka.

By doing what you love you will help yourself mentally to discover your Ithaka… the reason you were born in this world! I will not lie to you, it will not be easy, you should master your brain to get away from negative energies that shadow your dreams.

YOU ARE THE SHADOW OF OTHER PEOPLES’ PURPOSE  

AS MY FRIEND ANDROS SAID.

Although that some shadows have negative impact on us, they can also be helpful or supportive during this journey.

How?

Lets try an experiment to get more familiar how our future is           created from other peoples' shadows.

Imagine you are walking in a dark place… There are few people around you and one of them is approaching you and start walking for a while next to you. He is speaking to you and suddenly he disappears.

You now feel abandoned but you keep walking in this dark path. Suddenly the path is getting lighter, there are more trees around you, animals and a lake.

Do not stop there…

Keep walking…

Another person is approaching you! He is walking by your side, talking and laughing with you and unexpectedly he pushes you.. you get hurt and you are bleeding. That was painful and you are struggling to get up again…

Eventually, you stand up and you keep walking again. The light is about to disappear and then, two other strangers are grabbing you tightly and you continue walking together.

The path is shining now… Your scar disappears.
Feelings of happiness and joy surround you and you keep walking with your new friends. You see more light as you go further.

Keep walking, nobody can stop you!

One of your friends gets hurt and you help him get better but after a while you decide that it’s time to leave him behind because he is not the same person you met… and you run!

After a long run you arrive in a beautiful place full of green mountains, a big lake and many many smiley people.

Do you remember the place that you been dreaming to visit a long time ago?

You are there now!

You are overwhelmed, you can’t express your feeling in words. Even if you choose to be alone you decide to stay there because your heart is fluttering.

You arrive where you should have been but it took some time and you had to leave some people behind you.

..this is how we shadow others’ journey in what we call ‘life’

This is life, you will eventually find happiness and fulfilment!

You now may feel lost and disappointed with your life but do not forget…

The one you HAVE been through shit alone and no one knows how much you suffered.

You would be okay, it takes time, but you will escape the tunnel. ”

There is not such a thing to let you down. You will follow your own path and you will steadily find out why you were born in this planet.

Value your adversities, let them grow you… and then let them go.

It has been a difficult time for me, I can write for hours but I will close this short article here with the poem Ithaka.

Hope your road is a long one.

Hello dear readers,

Today I am so excited to share with you one of my favourite sugar-free cakes. Before I give the recipe, I would like to share with you some interesting Banana Nutrition Facts. I found. Interestingly, banana can help you to improve your mood.

” Bananas can be helpful in overcoming depression “due to high levels of tryptophan, which the body converts to serotonin, the mood-elevating brain neurotransmitter”

Plus, vitamin B6 can help you sleep well, and magnesium helps to relax muscles. Additionally, the tryptophan in bananas is well known for its sleep-inducing properties. ”

How amazing is that? However, banana itself cannot treat cognitive function. It can increase the chemical balance in your brain as it contains high level of serotonin and vitamin B6.

Vitamin B6 helps your body make Serotonin and therefore, can help in improving mood.

The combination other methods and mental health support will help you overcome any mood related issue.


TIME TO COOK

Shopping List

2 tbsp wholemeal flour
1 tbsp fresh cinnamon
1 tbsp baking powder
10 tbsp oats
5 bananas
2 egg
whites
Walnuts (as much as you like)
2 tbsp Chia seeds
1 tbsp baking soda


method:

Step 1. Heat oven to 180°C

Step 2. Smash all the bananas, and add them to the bowl.

Step 3. Crush the walnuts..
Step 4. Add the oats, flour, egg whites, baking soda, baking powder, cinnamon and chia seeds to the bowl. Last but not least, scatter the walnuts over the mix.

Step 5. Spread with some olive oil your pan, then pour it into your mix. Bake for 30 to 40 minutes until the top of the cake is caramelized and turns dark brown.

Recommendation

Economic but healthy meal – g.el foodies

I guess you are wondering what kind of a cheap food could be healthy with a lot of benefits for our health. Usually, when we think about an economic meal, in our mind comes junk food or something precooked and totally unhealthy.

Today I have great news for you, I will share with you a little secret, a very cheap meal (10-12‎, 6-7 servings) which contains three of the world’s healthiest ingredients.

According to studies, SPINACH, GARLIC and FETA CHEESE are recognised word-wide for their benefits.

SPINACH:

  • Improves immune system (Vitamin A)
  • Important source of vitamin for pregnant women (high in Vitamin B9)

shopping list

Barilla CANNELLONI

2 medium white onions

1 garlic clove

300g feta cheese (preferably Low in fat)

500g tomato Passata

3 bunches fresh spinach

Red CHILLI FLAKES, DRY BASIL ,ground black pepper & SALT

shaved cheese for garnish

2 oven pans to place the cannelloni

Step 1: Cut & wash spinach

Step 2: Heat olive oil in a large frying pan over medium-high heat. Add the chopped garlic & onions, cook for 2 – 3 minutes until translucent. Add also red chili flakes & salt.

Step 3: Once the onions & the garlic mix are cooked add spinach (5-6 min).

Step 4: Place spinach mix in a colander & press out most of the liquid (don’t need to thoroughly squeeze dry). Then place Spinach mix in bowl & mix it with feta cheese.

Step 5: Filling

*Don’t forget to sanitize your hands first!

Use as garnish the remaining mix.

Final step: Spread the tomato passata over the cannelloni (the picture shows the small pan I use). Add some dry basil, ground black pepper & salt. Top with shaved cheese before cooking.

*Different cheeses have different saltiness. If you use salty cheese for garnish or more amount than I used I would recommend to not add any salt.

Place in the oven & cook for 35 to 40 minutes at 180C or UNTIL the top is golden & the pasta tender

Colorful meal by g.elfoodies

Hey guys,

I hope you are all doing well.

I heard that you are getting tired of cooking every day. Well… me too!! But here you will discover an easy solution to enjoy your time cooking and your food.

Step 1.
Turn on the radio

Dance for 5 minutes and then you are good to go 🙂

Open the fridge and check if you have any leftover food.

If you have any leftover food think how you can eat/serve it again!

A few days ago, my brother's girlfriend cooked too much quinoa with bulgur and I did not want to threw it away.
Check below how I used it again.  

This is how Quinoa & Bulgur mix looks like

  1. For one portion you can use 1 cup of Quinoa & Bulgur (Recipe for the mix is below)

To make it more ‘attractive’ and presentable put some color on it.

It could be a helpful tip if you are on a diet.

I also had some butternut squash in my fridge.

2. I peeled it and cut it into 1-inch cubes (2/3 cup). Then I put it in a small sheet pan, added some salt, smoked paprika and pepper and baked it for 15-20 min.

Add it on the bowl with the quinoa & bulgur

3. Meanwhile, I chopped a medium cucumber & I de-seeded a small pomegranate.

4. I added some baby rocket and sun-dried tomatoes.

5. As soon as the roasted butternut squash was ready, I added some low-fat feta cheese.
















Chilli flakes & pumpkin seeds for the end.

Ingredients for quinoa & bulgur (one portion):

  • 1/2 vegetable stock

INSTRUCTIONS

In heated water (1 cup) pour the stock and the quinoa & bulgur mix. In about 20 minutes it will be ready.

WHAT YOU WILL NEED FOR THE SALAD

  • 2/3 butternut squash
  • 1 fresh pomegranate
  • 1 medium cucumber
  • fresh baby rocket
  • 4-5 sun-dried tomatoes
  • low-fat feta cheese
  • Pumpkin seeds
  • Chilli flakes
  • Salt & black pepper

YOU ARE NOT ALONE OVER THERE – #DAY20

Quarantine’s Thoughts.

Quarantine day 20.

To be honest is harder than I thought. The struggle is real! I guess you already felt it. No motivation, no energy for anything except food, bad temper, worries, concerns about the future, fears, anxiety etc.

But because I felt that you were not very well today, I really wanted to write something to encourage you.

You are not alone over there!

Remember: You and hundreds of thousands of people are in the same situation.

It was about time for me to think positive and embrace the current situation. I tried to find tiny small reasons to feel fortunate about and feel blessed into this health-crisis. However, I am not the only one who needs to be more positive.

WE should all be optimistic

WE should all find at least one reason to feel lucky

Because Yes, we are all blessed and lucky.

I know it’s hard because the current situation is damaging our mental health, but we can find ways to deal with it!

Let’s take a minute and try something.

– Close your eyes
– Think about the happiest moment in your life
– Take 10 deep breaths and try breathing through your nose.

How do you feel now?

If you focus on positive thoughts, you will achieve a positive mindset which will help you through this hard time.

So, we can prepare ourselves for this difficult time by starting to change the way we think. Trust me, developing a healthy mind can change everything. Your mind will give you the superpower to overcome this situation called ‘quarantine’. Our thoughts and emotions give the food to our brain. If you feed your brain with healthy food (thoughts & emotions) it will process them and will respond respectively.

Give healthy ‘food’ to your mind!

How to develop a positive thinking attitude during quarantine:

  1. Follow mental health and meditation pages,
  2. read a book,
  3. try new food recipes (you can follow my Insta account for ideas here)
  4. join online workouts / find free workout plans.

What helped me?

  • I redecorated my bedroom!
  • I bought some candles with my favorite smell & some smooth lights,
  • I displayed all the good memories I have on my wall (photos, souvenirs, gifts).
  • I listen to my favourite music all day long as loud as possible.

Do what you didn’t have the time to do all this time! do whatever comes first to your mind!

Take a minute and read the below, think about it and then repeat 3 times to yourself:
